However, I was out all last night and got home late and.... forgot to feed the starter and take it out of the fridge!! I woke up at six -- a dream that I was making pizza woke me -- and immediately went downstairs, divided and fed the levain.
It will be interesting to see when it's ready for mixing. I'm hoping to be able to mix around 11:30, which would have the dougn in the retarder by 1:30 --- I expect it will end up being a bit of a compressed pizza dough making cycle. Hope everthing works out!
